Tremendous selection of tropical flavoured beauties for your pleasure. Our dear friend Papito (Latin45, Esplanade Records) puts together 10 latin monster tracks exclusively for our venue CHITLIN', where he'll be guest on friday the 25th of january at Angelo Mai (http://www.angelomai.org/)

Dj, producer, radio speaker and impressive record collector, Papito is one of the most rappresentative diggers of hidden, obscure and rare grooves. Many latin masterpieces would of been forgotten if it wasn't for Paolo's continuos travels throughout South America and the Caribbean (Colombia, Panama, Venezuela, Trinidad & Tobago).

A group of unassuming, yet incredibly talented, locals came together and spawned some of the greatest music of all time: “Mustang Sally,” “I Never Loved a Man,” “Wild Horses,” and many more. Under the spiritual influence of the "Singing River" as Native Americans called it, the music of Muscle Shoals is some of the most important and resonant of all time. "I'll Take You There", "Brown Sugar", "When a Man Loves a Woman", "I Never Loved A Man the Way That I Loved You", "Mustang Sally", "Tell Mama", "Kodachrome", and "Freebird" are just a few of the tens of thousands of tracks created there.


In this film legendary artists including Aretha Franklin, Greg Allman, Bono, Clarence Carter, Jimmy Cliff, Mick Jagger, Etta James, Alicia Keys, Wilson Pickett, Keith Richards, Percy Sledge, Steve Winwood and others bear witness to the magnetism and mystery of Muscle Shoals and why it remains a global influence today.

Dalla cumbia più oscura ai re-edits contemporanei, questa edizione di Chitlin’ sarà un mix esplosivo di groove moderno e groove d’annata che vi terrà incollati alla pista fino all’ultima battuta di congas.

Collezionista, producer, conduttore radiofonico, fondatore della Esplanade Records, Papito è uno dei personaggi più rappresentativi nel mondo del diggin’ e dei rare grooves. Molti capolavori dimenticati di salsa, mambo, cumbia, latin funk, raggae e afrobeat sono noti grazie a Paolo e ai suoi continui viaggi nel Caribe e nell’America Latina (Colombia, Panama, Trinidad & Tobago, Venezuela). Giovane dj e producer artefice di numerosi remix e re-edits, grazie ai quali sta guadagnando sempre maggiori attenzion, sopratutto all’estero, Rebel ha condiviso la consolle con grandi nomi come Minimatic e Dorfmeister e ha collaborato con grandi producer come Panama Cardoon, Deady Dred, Suonho. Fa parte della crew di Dj’s Choice, il cui sound è un’originale miscela tra suoni nuovi e vintage, con connubi dal beat irresistibile orientati verso note funk, soul, latin, reggae, afrobeat, jazz e bossanova remixati con profondo rispetto verso l’originale, ma anche reinterpretati e rimescolati con le tendenze hip-hop e breakbeat.

THE SOUL SURFERS: KILLER FUNK FROM RUSSIA

They come from Nizhny Novgorod, a small town in the East of Russia, and they play a killer  heavy deep funk.

They're called The Soul Surfers (even if they use different pseudonyms like the Gospel Surfers, Rhythm Cowboys or the Snow Surfers) and they're a brand new name in the Funk/Soul scene. Their records are pressed in USA in limited editions and they're starting to be good material for collectors.

I've chosen the track that I like most among their productions. It's
 a raw instrumental funk with a heavy beats, organs and deep baselines called "Doin' the Raskad". Released on California based Ubiquity Records in very limited editions. Check it out and grab a copy of it!

★ Roasted Chicken with Lemon and Herbs



Ingredients:
1 5-pound organic chicken
2 organic lemons, quartered  (you are cooking the peels too)
handful fresh herbs ( I used lemon thyme, lavender, parsley and sage)
1 large yellow onion, peeled and sliced
3 tablespoons butter, melted
kosher salt
fresh black pepper
olive oil
Come home with the bird, snip some herbs to stuff it with on the way in the door if you are a person like me who has pots of herbs by the front door (or buy a mix at the store) and crank the oven to 425 degrees. For a five-pound chicken it will take about 1 1/2 to 2 hours to roast. You can relax while it roasts! Wash your hands. Grab two lemons and rinse them. Grab an onion and peel and slice it. Grab a roasting pan and throw the onion slices in there, scattering them to cover the bottom of the pan. Drizzle them with a good amount of olive oil and season with kosher salt and fresh black pepper. This part will take you about five minutes. Seriously!
Then, quarter the lemons. Unwrap the chicken and place on a rubber cutting board. Pour a small amount of salt and pepper onto the board beside the chicken. Then you won’t contaminate the other salt and pepper! Remove the bag inside the chicken with the liver, heart etc….do what you will with that. I cook the liver with onion and butter, salt and pepper, and eat it greedily. The giblets are good for gravy. Then if you have a non-organic bird rinse inside and out with cold water and pat dry, or not if you have organic. Salt and pepper the inside, then stuff with one lemon and the herbs. Place the chicken over the onions in the pan, season with salt and pepper. Melt about 3 tablespoons of butter and brush the bird with all of it. Add the other lemon to the pan. Put into the oven. Set the timer for an hour and baste when it goes off. Bake another 30-45 minutes until the internal temperature of the inner thigh is 160 degrees. Let rest, then slice and eat with the onions and pan juices poured over the croutons.
